My 2013 Lemon Plan

I’ve harvested the Meyer lemons from my bushes outside. This year I ended up with 5 buckets of lemons.

In the past, I’ve juiced them all and stuck them in the freezer, but I decided this method wasn’t working very well, since I just end up with a lot of old lemon juice taking up space.

So this year, I’m going to make a bunch of food with the lemons. Here are the things I’m making:

Mmm! I love lemons! Of course I love cooking fish with a few slices of lemon, but there’s almost lemon chicken (cooked with white wine and lemon juice, served over egg noodles) but recently I discovered the joy of lemon-ricotta donuts! I ended up making them as cookies instead, but that’s just another great use for lemons! ALSO I lovelovelove lemon bars, if you have plenty of eggs! MMM they’re such a great, versatile fruit!

What a terrific problem to have!

Lemon asparagus
Hummus
Guacamole
Flavor plain yogurt with it
Lemon ice
Seafood seasoning
Candied lemons

Limoncello! I have a new batch going right now. I froze all the leftover juice into little cubes for future drinks and salad dressings. :) Those champagne preserves sound amazing too.

I usually just leave my lemons on the tree and pick them as I want to use them, though, so there’s not a huge rush to use everything at once.

When I overbuy and under-use lemons, I cut them up and freeze them to use in a glass of water. Two problems solved at once: I get cold water, and the benefits of the lemon in one shot! :)

My favorite thing to do with a lemon? Smell it! I LOVE the smell of fresh lemon! I have lemon scent that I wear in the spring and summer months. I can’t wait to spritz some on!
Love it in iced tea, too!

Thanks for the suggestions. I agree, it’s a good problem to have. I think I might tried candied lemons and lemon chicken too.
